First, it is arguable whether a bee knows it will die if it stings you: a bee's brain is not large enough for there to be any logical thought and reasoning. They react purely on instinct.

Secondly, a bee's sting is really evolved to deal with other insects, and when a bee stings another insect it creates a hole in the other insect's hard exoskeleton and has no problem withdrawing the sting through the hole. When a bee stings an animal or human, mammalian skin is elastic and closes around the string, trapping it. If you have the nerve to keep still when stung, the bee will go round and round, effectively 'unscrewing' the sting from the skin and will eventually get free unharmed. It is only when the bee tries to pull the sting out in panic that the sting breaks away from the rear end of its abdomen causing injuries that lead to its death.

depending on what type of bee it is vairies

i gotten stung by a yellow jacket on my foot and there was a little spot or bump and then gradually a smaller in bumpyness but bigger in size idk if that makes since but anyways it was really red and was there for maybe a week or few days and was very very very itchy:(

Female worker honey bees have a barbed stinger. When she stings a mammal with relatively elastic sting, it becomes impossible for her to remove the barbs from the skin. She will keep pulling until eventually the stinger and poison sac are left behind with a part of her abdomen and digestive tract still attached. The bee will then fly off to die. The larger male drone bees don't have stingers and the queen bee has a smooth stinger and can sting a mammal multiple times. The honey bee is the only bee to die after it stings.
