Many reasons. First off, it depends what time period we are talking about. Both countries, quiet rightly wanted the land as they both wanted to expand; Alsace-Lorraine was in between them so both felt like it was a possible addition. Also, Alsace-Lorraine had a lot of German speaking people in it and was therefor strategically good for Germany.

If we are talking 20th century, than France wanted it back as it was originally French until 1871 Franco-Prussian war, where Germany got hold of it. Ever since this, France wanted the land back (and it did get it back after the first World War, in 1919, thanks to the terms of the Treaty of Versailles), however, obviously, Germany did not want to give it back.

After this, Germany wanted revenge and so it invaded France again in 1940.

It is a German-speaking territory and Hitler sought to reintegrate it into Germany. The territory has traded hands for 400 years between France and Germany given its geographical location - it is originally a German territory though, a part of the Holy Roman Empire.

The assumption made in the question is not accurate.

The Germans annexed Alsace and Lorraine from France in 1871 after the Franco-Prussian War of 1870-71, mainly for strategic reasons and the area was heavily German-speaking. They did not take it during WW1, however. France annexed the territory after WW1.

Alsace was a heavily German speaking area, and France violated the terms of the Treaty of Versailles by refusing to grant the citizens of Alsace a plebiscite, instead outright annexing the territory.

France did not just want the region, they wanted it back. The German Empire was proclaimed in the Palace of Versailles after the Franco-Prussian war (1870-1871). After the First World War, France, among other Allied powers, made significant claims to German territory, the first of which was their old territory of Alsace-Lorraine.
