Why are some Greek sculptures missing their upper extremities?

Because they are the weakest parts of the statue. Consider that most statues are about 2000 years old. Many of them were found buried under modern civilian buildings, roads, etc. Statues were also prone to fall off their base in earthquakes (which happen in Greece a lot!) Also, some of them (usually the headless ones) were deliberately vandalised by various opponents of the Greek culture over the years.
