They are made with Wooden mainly because plastic is really Cheap.
ADDED> Not sure I follow that, but wood and plastic are more pleasant to handle than metal because they do not readily conduct heat from your hands, which you don't want happening in cold weather. BTW why is a question about gardening tools, in the Cooking Equipment section?
The metal body of the pan absorbs heat quickly, and the food is cooked quickly too. The wooden (or plastic) handle stays cooler longer. So the pan can be taken off the stove without the cook burning his or her fingers. Even so, most wise cooks use a cloth just in case the handle (of any material) has become too hot - which often happens if the pan is on the stove for a long time.
Because metal handles can get hot. I once grabbed a metal handle full-on after cooking, and it caused second degree burns all over my hand. Wood on the other hand, does not heat up quickly.

The main reason that metal cooking utensils have wooden handles is to prevent you from burning yourself. Heat is easily transferred in metal. With a wooden handle, you have a very very very low chance of burning yourself. (Unless you touch the metal of course)

Metal is more durable then wood and will last longer. Metal can handle marks or spills better then wood. If you spill liquid on wood it can rot easily
Wooden are sturdier and don't rust.
