This is known as an Incremental backup. This is in contrast to a Full backup, which stores all files.

A daily incremental backup is recommended with a full backup at least once a week, for most systems.

A restore then entails bringing back the last full backup and applying each subsequent day to the point required.

ADSM (now Tivoli Storage Manager or TSM) uses "incremental forever" technology where every backup is incremental. It also comes with a nifty recovery tool which calculates what a snapshot would look like on a given day, at a given time. This requires constant and consistent cataloging, though, and can take some time to calculate.

Totally depends on the backup methodology and the rotation scheme. I have a couple of clients that backup everything everyday and keep the tapes for two weeks. They have 14 copies. Other's backup everything (or changed data in some cases) everyday, and keep the daily copies for two weeks, but keep the weekly tapes for months. There could be 30-40 copies in those cases.
