Depends on the year, make, and model. In the North American market, Volvo trucks are available with Volvo or Cummins engines, and, in the past, were available with Detroit Diesel (up to the 2002 model year) or Caterpillar (until 2009) engines.
I posted pictures on the location and replacement of an ambient temp. sensor for a 2001 S40. Google "ambient temperature sensor location/replacement" or go to Matthew's Volvo site and search there.
Trouble code P0072 means: Ambient air temperature sensor circuit low input
Next to the thermostat. you will see it when you remove the hose
Try looking on the EGR valve underneath the intake manifold.
in mirror
It is located in the intake pipe between the MAF sensor and the throttle.

The idle shutdown mechanism depends on how the ECM is set up... there are many ways this can be done. Running it at high idle might or might not override the idle shutdown, dependent on how the parameters are set. If you have ambient air temperature override, you can tape a hand warmer to the temperature sensor.
Usually right above your temperature control on your dash
The 850 does not use a MAP sensor. It uses a MAF sensor that is located and attached to the air filter housing lid
