Sanskrit is the ancient most language written in Devnagri i.e. Hindi script.

There is no specific date available in History but is said to be learnt from Rishis by Shruti, meaning by hearing. Later that was adopted to write the Vedas and from the date Vedas are written and read, Sanskrit was recognised.

Why are all the mantras written in sanskrit?

That's because Sanskrit is the language they were originally written in. 'Mantra' is itself a Sanskrit word. Sanskrit is believed to be the language the Hindu Gods used to write and converse, and hence the 'divine sound' or 'cosmic sound' that 'resonates throughout the universe' (Aum) is also written in Sanskrit.
