Italian is rooted in latin, so it probably was a transition that was undefined. in other words they didn't change at a recognizable time.
I was in Italy for the first time on New Year's Eve, 2005, and when I asked a native Italian when the change occured, he replied, "Around the sixth century." Right at the beginning of the Dark Ages.
Called the Dark Ages due to the decline in literacy, civilization and overall social advancement, I assume that since Latin was so coplex with its case-endings and such , the Italians of the unrefined soceity of that period decided to simplify things and thus Italiano was born.

∙ 9y agoThat's not how it works. Latin changed and changed over the years (a word here, pronunciation there) until it really couldn't be called "Latin" anymore. Latin changed in different ways in different places due to exposure to other languages (for example, Basque and Arabic in Spain). That's why Italian and Spanish are really similar, but not the same language anymore.

There isn't a simple answer. Prior to 16th c there was not one Italian language at all, but several regional languages. The Florentine language was established as the common literary language in the 16th century - when the 1st Italian dictionary was published - and is what we now call Italian. It became more commonly adopted after Napoleon invaded in the 19th c, and regional languages went into decline at that time.
