That might depend on which congregation the priest belonged. New France was initially serviced by Jesuit missionaries. They typically wore a black soutane or cassock, which resembles a robelike trenchcoat made of cloth down to the feet. They had a white cloth collar underneath the collar of their cassock and they carried rosary beads which were affixed to a black sash or belt. I know that the Jesuit priest's role in new France was to convert the "savages" or the natives to Christianity. but don't know about the priest's in general
