That might depend on which congregation the priest belonged. New France was initially serviced by Jesuit missionaries. They typically wore a black soutane or cassock, which resembles a robelike trenchcoat made of cloth down to the feet. They had a white cloth collar underneath the collar of their cassock and they carried rosary beads which were affixed to a black sash or belt.
