To make a word plural, you do not use an apostrophe. The plural of Simpson is Simpsons. The only words I could find that rhyme with Simpsons are Simpson's (meaning something belonging to one person whose name is Simpson), and Simpsons' (meaning something belonging to more than one person named Simpsons).
Word combinations can be used in rhyme to accomodate larger words. Thus "blast the gate" and "masticate" are rhymes.
Some examples of that which apply to "Superman" would be "you her fan?" or "blooper fan" or "Trooper Dan".
Other times, one rhymes a long word with a short one that only matches the last syllable.
