Kosher for passover means no leavening. Kosher for passover food is food that contains NO bread, pasta, crackers, cookies or cake... Also forbidden are beer and whiskey. A more technical answer is that it can't contain chametz - any of the five grains (wheat, barley, oats, rye and spelt) that has come into contact with water, which causes leavening.

Kosher meat differs from meat you can buy at a regular supermarket in the following ways:

  1. It's saltier - a part of the process of kashering meat is coating it is salt to draw out as much blood as possible. The consumption of blood is forbidden in Judaism.
  2. The way the animal is slaughtered is different - kosher slaughter requires that a specially trained person kill the animal with a single slice to its throat with a perfectly sharpened knife so that it dies with as little pain as possible as fast as possible.
  3. In most places only the front quarter of the animal is used so no cuts like tenderloin or T-bones.
  4. Only animals that are kosher are allowed so in North America, the meats most commonly seen are beef, lamb, and bison.
  5. The requirements regarding the health of the animal are more strict than government requirements in both Canada and the US. Therefore, animals that are inspected after slaughter that don't meet kosher requirements due to signs of disease on the lungs and other organs are sold as non-kosher.

First of all, there are specific animals that are kosher in accordance with the Jewish law and therefore are permitted for consumption. Besides for the type of animals that are kosher or not kosher, the Jewish law states a specific way to slaughter animals. If this specific technique is not adhered to, the meat is not kosher.

There are lots of food rules in the Torah. Rules forbidding pork and rabbit, rules forbidding eating creepy-crawly things, rules forbidding eating shellfish, rules forbidding mixing milk and meat. Those rules apply at all times and places (although you can violate any of the food rules if the alternative is starvation). Passover has its own additional rules, all centered on prohibiting leavened grain products. These rules apply to wheat, rye, oats, barley and spelt, and forbid even the remote possibility that these grains or products derived from them have come into contact with water for long enough to allow fermentation to begin. The one food that may be prepared from these grains is matzah, unleavened bread, where the time from mixing flour with water to the completion of the baking process is 18 minutes.
