You can write software. Or you can get a job at Initech going through thousands of lines of code changing 99 to 2000 in the dates. AAS in Computer Science Technology? The two-year MCSE? Quite a few people with that degree work in companies that sell, install and provide tech support for business computers--which means you get to drive to customer sites a lot. I think it beats sitting in a cubicle all day every day. The Initech guys had BSCS degrees.

There are almost no jobs in any scientific field that you can get with just an associates degree, generally you need at least a masters degree to get these jobs.

Perhaps you could qualify to work as an equipment maintenance technician in a scientific lab. You would not be doing any "science", just keeping the equipment the scientists use working.
