Any plant of the genus Helianthus; -- so called probably from the form and color of its flower, which is large disk with yellow rays. The commonly cultivated sunflower is Helianthus annuus, a native of America.

Sunflower has recently been adopted as a symbol of happiness, strength, a love of the sun & sunlight and because it is said to always turn its face to the sun it is considered by some to be a symbol of faith. I can find no ancient or even old references to it as a spiritual symbol. The closest I can find is a reference in the Victorian language of flowers to tall yellow sunflowers having the meaning of haughtiness and the dwarf variety meaning adoration.
