Saffron is one of those ingredients that is rare and expensive enough that not everyone has tasted it. The two dishes that come to mind are yellow rice and paella. Saffron adds a very nice perfumed note to food and a certain richness. The taste would compare to the richness you taste in cream or slow cooked beef. A bit of perfume, but rich rather than sharp. When simmered in cooking liquid, it becomes a beautiful pale yellow colour.
