I have a recipe book from 1965 with a Ben Rhydding pudding from Yorkshire. Stewed fruit is layered with thin slices of 6 sponge cakes (trifle sponges) in a mold. It is then weighted down with a plate and something heavy, left until cold, and turned out. Served with custard or cream. I remember my Grandmother from Nottinghamshire making this when I was a child, and I recall it as was very tasty. I am going to have a try at making it with summer fruits from the freezer. Yummy!
