Knifemaker or bladesmith depending on the method the knife is made although generally they are referred to simply as knifemakers.
Bladesmith seems to fit in most applications, at least where blacksmithing techniques are used to forge a blade for a knife.
Someone who collects knives is a knife collector or knife dealer. The fancy term is machirologist.
A Knife maker is a Cutler - which gives the group name of cutlery to knives, forks and spoons.
