That will depend on the weight of the joint AND its shape and the oven temperature.

As a rule of thumb

  1. Take your beef out of the fridge 30 minutes before it goes into the oven.
  2. Preheat your oven to 240°C/475°F/ gas 9
  3. Place the beef in this oven, uncovered for 15 mins.
  4. After 15 mins. turn the oven down to 180°C/356°F (160°C/320°F fan assisted)/ gas mark 4).
  5. Now let it cook for a further 25 minutes per kilo (11 minutes per 450g/1 lb).

Obviously if your joint is thin, then the heat will penetrate faster so you will need to reduce your timings.
