Om (or AUM) is the sacred syllable of Hinduism and represents God or Brahman - the source of all existence representing the three qualities inherent in the Cosmic Vibration.
A - represents (Brahma) creation
U - represents (Vishnu) Preservation
M - represents (Siva) Transmutation
'Om' is called Pranavah which mean "the ideal name" or "the appropriate name" for the lord.
Pra means "appropriate".
navah means "name".
It symbolises the supreme self, Brahman. The Supreme Self is the God.
The 'Om' has got two parts - Sound part and Silence part, in the beginning and at the end. Before 'Om' is chanted, there is silence and after the chanting, there is silence which is considered an integral part of Om. The sound part corresponds to "Saguna Brahman" i.e. the Supreme Self with attributes and the silence part corresponds to "Nirguna Brahman" i.e. the Supreme Self without attributes.
The sound part has three components 'Akaara', 'ukaara' and 'makaara' sounds which corresponds to the three saguna apects-Viraat, Hiranyagarbha and Antaryaami aspects. The silence part is called Amaatraa. This concept is discussed in the Hindu scripture "Maandukya Upanishad".
You could be highly analytical about it and say that it is about this or that, but for the most part, it's a representation of Hinduism and of the relation between God and his creation (i.e. people) as it is implied to be the rope between God and his children, but those who are not Hindu, generally wear it because it has pretty much the same peaceful connotations as a Peace Sign.
The om symbol represents everything existing as one. It is a symbol of infinity.
