The Jewish religious leadership were so concerned because the new believers were not living up to their rules and standards that were traditions. The new believers believed things that the Jewish leaders did not believe.

Designating people by belief is not typically a Jewish custom. Jews are more likely to be designated as traditional or liberal.
Though the Sabbath is technically holier in certain ways, Yom Kippur is the usual answer. This is the Day of Atonement, once a year, a full-day fast (Leviticus ch.23) with special prayers and Torah-readings. The Talmud refers to it as The Day (Yoma), or The Great Day (Talmud, Rosh Hashanah 21a); and in Halakha (texts of Jewish law) it's known as the high point of the Days of Awe (Yamim Nora'im). Yom Kippur is the most important holiday because of its special power of atonement.

Before Christianity, people believed in God according to faith. Most were Jewish, but there were Jewish converts and those who just believed. The early believers simply were looking forward to the time of Christ, and according to Paul, they were justified by faith.
There were two types of Sonderkommando; the German Sonderkommando and the Jewish Sonderkommando. Essentially the word just means 'special squad', ie. a squad created for special duties. The most famous is of course the Jewish Sonderkommando, as they were the squads employed in the extermination process.
