In general, it's a chemical reaction that adds hydrogen atoms across a double bonded carbon. In the food industry, oils are frequently hydrogenated to increase shelf-life. This hydrogenation creates some fat molecules which arrange themselves in trans configurations known as trans-fats, which have been determined to be dangerous and have a negative effect on cardiovascular health. Labeling standards in the US allow manufacturers to list a product with .5 grams or less as containing "0 grams trans-fat"- so read the ingredient list! Any product with an oil containing "hydrogenated" or "partially-hydrogenated" should be avoided, as it contains trans-fats. As little as 4 grams of trans-fat a day has been linked with doubling the risk of heart attack.
HydrogenatedHydrogenated oil is made by forcing hydrogen gas into oil at high pressure. Both animal and vegetable fats can be and are hydrogenatedhydrogenatedhydrogenated. In general, the more solid the oil is, the more hydrogenatedhydrogenatedhydrogenated it is. Two common examples of hydrogenatedhydrogenatedhydrogenated oil are Crisco and margarine. In the 1990s, it was realized that these products might have deleterious health effects, a tragic irony since they were originally produced and promoted as being healthier than conventional oils.
Hydrogen is a form of gas and is the first element of periodic table whose mass and atomic number is one. It is the lightest element in the world.
