Endored was a manner of preparing birds such as swans and peacock to eat during the Middle Ages. The meat was painted with saffron and melted butter then roasted. It was then placed back inside the original skin with the feathers still attached.
The flesh was painted with saffron dissolved in melted butter. Swans and peacocks were among the foods only eaten by rich people. Using saffron made them even rarer.
