This a time to explain that knowledge of medical terms is very helpful. The ending of the word: -ase means enzyme. All words ending in -ase are enzymes. The beginning of the word means: amyl-. This is what the enzyme works on. In this case a sugar called amyl-ose. Sucrase works on sucrose, lactase works on lactose. These substrates are not always sugars. Proteases work on proteins.

As far as suffixes go, remember that anything ending with an -ose is a carbohydrate and its corresponding enzyme ends in -ase. So, the amylase enzyme hydrolyzes amylose, a polysaccharide.
