They are used to decouple a circuit. Basically you divide the circuit in two but they share the signal that is coupled in the transformer without physically connecting the two circuits. This gives you dc blocking, great interference blocking, but at the same time you have the same signal on both sides of the Transformers if it is 1:1. You could have other combinations such as 1:2, 1:4, etc.
