An induction cooktop uses electricity to generate a rapidly changing magnetic field in coils below the cooking surface. When a ferromagnetic vessel (something with a lot of iron in it) is placed on the surface and the coil is energized, the magnetic field rapidly "sweeps" the iron-based cooking utensil. The quickly changing magnetic field will, by induction, cause electrical currents within the metal cooking pan, and these eddy currents will heat the pan quickly. (Don't worry about being electrocuted.) In general, iron-based materials are not efficient conductors of electricity; there is a fair amount of resistance in the metal. Electric current flowing through resistance creates heat, and the electrical energy is converted into thermal energy. If you suddenly have the idea that glass or ceramic cooking utensils won't work on this surface, you would be correct.

In an induction cook top is a coil of copper wire is placed underneath the cooking pot. An alternating electrical current is made to flow through the coil, which produces an oscillating magnetic field which creates heat in the cooking vessel over it by induces an electrical current in the pot, which produces resistive heating

The induction cooking stove/cook top is an electric appliance with magnetic induction/electromagnetic field under the glass top to create heat as opposed to thermal conduction from other cook top, hence an induction cook top will work with ferro-magnetic cookware only, such as stainless steel, cast iron, cookware that are not magnetic such as copper, aluminium and ceramic will not work on induction stove top.

An example of induction cooking would be a flat stove top. An element's electronics power/heat up a coil, that produces a high frequency electromagnetic field (orange lines). That field penetrates the metal of the cooking vessel, and sets up a circulating current which generates heat. The heat is then transferred to the cooking vessel's content.

Induction cooking heats an object, such as the pot of pan, to cook food. This has proven to be beneficial because it provides a more even heat through out the pans.

The electric current supplied to the induction is creates a magnetic field. This in turn produces heat due to excitation of iron molecules.

What utensils can be used on a induction cook top?

In general, if a magnet attracts to the bottom of the cookware, it can be used on a induction cooktop. Aluminum, glass, ceramic, copper are not suitable for induction. Cast iron and some stainless steels are good. Carry a small magnet when shopping for induction cookware. The manufacturers will often state "induction ready" or similar wording on the packaging.

What are the benefits of induction compared to ceramic cooktops?

The benefits of induction cook tops are that they are faster, cheaper, cleaner, and safer than ceramic cook tops. Induction cook tops have no open flame or gas, making them considerably more safe than other cook tops, and they are also faster because the energy is directly transferred to the pan.

What brands of cookware is ferromagnetic?

I assume you are looking for something for a induction cook-top. You can always use cast-iron or enameled cast iron. Most stainless steel will work, but bring a magnet with you to the store, if the magnet sticks, it will work on your cook-top. In general a thicker steel pan will be better than a thinner steel pan.
