well. not all of the catterpillars protect themselves...but most of them are already green and can camouflage. other animals and predators don`t see as we humans do, and cannot make the difference between a leaf and a catterpillar, or simply, the caterpillar makes a strange ultrasound that can scare or make the stupid animals flee

When the caterpillar is in danger, it puffs up its tail which then appears like a snakehead to scare their predators away. E.g. Hawkmoth caterpillar.

they have adapted because there claw like feet are use to hang onto leaves and the also have gone green to camouflage into there surroundings.
