What is the difference between a bachelor's degree of applied science or arts and a bachelor of science or arts?

It's up to each individual school (it may even be decided at the department level) what courses are required for each degree. Sometimes there are guidelines established by a professional organization (for example, most chemistry departments in the US make an effort to obtain approval for their curriculum from the American Chemical Society).

I can give you two examples from firsthand experience (these are about three decades old; things may have changed):

At my undergraduate school, the difference between a BS and a BA in Chemistry was that a BA required 16 credits in a single foreign language, and the BS allowed foreign language (German, for historical reasons) classes as an advanced elective but did not specifically require them. (I don't believe the school even offers a BA in Chemistry anymore; nobody ever took it anyway.)

At Iowa State University, the difference between a BS and BA in Chemistry was which box you checked on the form you filled out to specify how you wanted your name spelled on your diploma. Both degrees were regarded as identical, and the school would happily award whichever one you preferred for the same coursework. They'd give you both, if you paid an extra diploma fee.

In some fields, there may be a distinction, but in general ... well, in general, you can't generalize.

The main difference between a bachelor of science and a bachelor of arts degree is the way that they are accomplished. A bachelor of science degree is comprised of a major with a minor that is NOT related to your major. A bachelor of arts degree, however, is comprised of a major with at least two years of a foreign language. Status level, a bachelor of arts and a bachelor of science are the same; most professions do not have a strong preference to one or the other.
