Water is a very good solvent. When an ionic compound is dissolved in water, it breaks into its contituent radical ions. say for example if you dissolve NaCl in water, then it decomposes into Na+ & Cl-

another example, when (Na)2SO4 is dissolevd in water it dissolves into two Na+ ion and one SO4- ion.

The bonds of covalent compounds remain intact even in those that dissolve readily in water, such as sugar alcohol and others.

When an ionic compound is dissolved in water, it is broken up into its positive and its negative ions. We shall use Table Salt for our example. It has the formula NaCl, which stands for Sodium Chloride. It becomes a Sodium ion and a Chlorine ion. Water has the formula H2O. That is two atoms of Hydrogen and one of Oxygen. The Hydrogen atoms are on one side.

The Chlorine ion becomes surrounded by Hydrogen atoms and the Sodium atom becomes surrounded by Oxygen atoms.

Covalent compounds consisting of long chains of carbon atoms do not dissolve in water. They do not have anything to attract either the Oxygen atoms or the Hydrogen atoms.

By putting an acid or alcohol group on the end of a covalent compound, it will make the compound dissolve in water. Part of the compound will be attracted to the Oxygen atoms in the water and the other part to the Hydrogen atoms. (When the chains get 17 atoms long and longer something else happens, but we will not get into that.)
