Well... drinking expired coffee may not be the best thing for you ... especially if there is some milk or creamin it. Drinking expied coffee may cause some food poisoning, but I really wouldn't worry about it . If its bad enough it will go up the same way it went down.

Probably nothing, except maybe to get a bad taste in the mouth. Unless the powdered creamer were contaminated to begin with, it's a shelf-stable powder and there would be no microbiological growth. There could be some chemical changes that would change the flavor.

Now these were vacuum sealed bags and they were dark roasted coffee beans. They tasted fine. Not as good as fresh batch of roasted coffee, but you wouldn't expect them to be would you? Now if you're going to do this, make sure their is no mold or any other obvious signs of funkiness on the expired coffee. Now when it comes to expired ground coffee, I usually won't drink expired ground coffee that is older than 3 or 4 months. But then again, you want to make sure that the coffee looks fine and living in a dry climate certainly lengthens the expiry date as compared to a moist climate. Bottom line is to enjoy as freshly roasted coffee as you can and when ground, enjoy your coffee beans within a week is the best practice. This way you'll never have to worry about it.
