A blood test can show if you have Diabetes, infection, liver and kidney problems, high cholesterol, anemia and a multitude of other things. Blood tests can tell if a pregnancy is progressing well. Generally if you go to your doctor and you are feeling unwell but its not a cold he/she will send you for a blood test.

Exactly what can be revealed by blood tests will depend on which of the hundreds of available tests are ordered by your doctor (but since the question is asked as an HIV question, I will attempt to answer it in those terms). For anyone who is HIV-positive, blood tests will almost certainly measure the amount of virus that is circulating in your blood (viral load test), the strength of that part of your immune system that is typically affected by HIV (absolute CD4 count) and the proportion of your white blood cells that are CD4 cells (CD4%). These tests monitor how the disease is progressing, indicate when it is time to start treatment and show how successful treatment is in controlling the virus. If you are receiving treatment, other routine tests will typically include a complete (or full) blood count (CBC/FBC), urea and electrolytes (U&E), liver function, bone profile and lipids (cholesterol and triglycerides) - which basically count the numbers of the different types of blood cells and measure the various chemicals in your blood, to check on the health of your heart, liver, kidneys, pancreas, muscles and bones - to see how you are coping with HIV and whether your drugs are having any undesirable side-effects. Depending on where you are, routine testing may also include screening for hepatitis and syphilis.

That would depend on the extent of the test, however, if sufficiently comprehensive, it can provide a list of most exposures to any substance during the subjects lifetime.
