There's a story about that.
The Aztecs (or "Mexicas", in the Aztec language) came from the North of what is Mexico, they were nomadic, and when trying to find which place to settle in, the God of War Huitzilopochtli appeared to them in a dream/vision and told them to settle in a place where they would find an eagle eating a snake on top of a nopal (similar to a cactus).
They travelled and travelled looking for this sign. Eventually, they found it in what would now become Mexico City. That symbol was then later put in the flag.
The national bird of Mexico is the Crested Caracara (Caracara plancus). Not to be confused with the Mexican Golden Eagle (Aquila chrysaetos), which is found on the Mexican flag and coat of arms.

better question, what color is the mexican flag?
It usually has to do with what the country has done or if they are peaceful. For example the Mexican flag has a bird and a cactus on it because the Aztecs were told from their gods to go to a place where there was a bird and a cactus. Years later spain conquered the Aztecs. After that Mexico broke away from Spain and used it as their flag.
