Apostalize means "to certify, to stamp approval upon, to render official." In the U.S.A., we speak of official, certified or even notarized documents. In other parts of the world (I have seen in Korea and Mexico), they speak of apostalized documents. Example: An application for teaching English in Korea: "Provide an apostalized diploma and a background check (apostalized by the Secretary of State)."

It is very easy to confused with apostatize, which means "to abandon faith or group, to turn back from beliefs held." Example: The Christians listen in silence to these lectures. When pressure was placed on them to apostalize, however, not one of them would nod his head in the affirmative. (Brett Lott, Eyes to See, Google books.)

It appears that spell checkers often change the word to apostatize without the writer catching the change. Even in the above-mentioned application for teaching in Korea, the second usage of apostalized was misspelled as "apostatized by the Secretary of State." (huh????)
