A palm branch (or palm frond or palm stem), usually refers to the leaves of the Arecaceae (sometimes known by the names Palmae). The palm branch was a symbol of triumph and victory in pre-Christian times. The Romans rewarded champions of the games and celebrated military successes with palm branches.
One symbol would be the palm branch because the crowd laid palm branchs upon the ground when Christ rode into Jerusalum. Another symbol is a donkey, for this is what He rode into the city.

On the day before Ash Wednesday the leftover palms from last year's Palm Sunday are burned and the ashes are used on Ash Wednesday to 'anoint' the faithful. Palm Sunday is when people celebrate Jesus entering Jerusalem and ash Wednesday is when you use the left over palm leaves from palm Sunday. They are burnt to an ash and then in the mass the congregation is blessed with them.
A few special things happen. First, the congregation usually receives blessed palms reminding us of how Jesus entered Jerusalem as a popular healer and teacher of the people. Also, Palms Sunday officially begins the Holy week, the final week of the Lenten season of preparation for Easter.
