There is no distinction between what foods a person can/can't eat on Purim as opposed to any other day of the year.

On Purim, you should not eat anything from which your doctor has told you to stay away. For example: If your blood pressure is high then you should not eat foods containing high sodium levels, if your total cholesterol is high then you should not eat a lot of eggs, and just in general you should not indulge in sugary sodas or foods with added sugar.

In addition, if you are Jewish and intend to observe the laws and traditions of your faith, then on Purim you do not eat dairy and meat foods at the same meal, and you don't eat foods that are intrinsically unkosher, such as pork, or processed foods that are not kosher certified. Same as on any other day actually.
