Just about any seasoning you would normally use for beef or chicken is good for pork as well. Your choice of pork seasonings would also depend on the regional taste preferences of the persons you are cooking for. So, with that in mind, I offer a few of my favorite seasonings for a pork roast. Thin slices from a lemon and or lime and a medium yellow onion placed on top of an herbed roast. My favorite herbs for pork are garlic, rosemary, comino (ground cumin) not to mention salt and pepper. The ratios are entirely up to personal, tastes but I usually start with 1 tsp each as a rub for 5 lb. roast. The herbs (ground fine) could also be injected in a mixture of olive oil.
