It would help greatly if you specified an age range. One possibility would be to go to the local public library and see if there are any "scientific experiments for boys and girls" type books, and pick something from there.

DO NOT pick "chemical volcano." We've all seen it, it doesn't really teach anything, and your less-imaginative classmates will choose it, so there will probably be several of them.
