Johnny cake is cornbread. According to Alton Brown's show, "fiesting on waves" it actually comes from the word "Journey Cake." People would bring cornbread on long journies, hence the name. Johnny and Journey sound similar with a heavy Caribbean accent.

Here are the ingredients:

2 cups of cornmeal

2/3 cup of milk

2 tablespoons vegetable oil (lard)

2 teaspoon baking soda

1/2 teaspoon of salt

Mix ingredients into a stiff batter and form eight biscuit-sized "dodgers". Bake on a lightly greased sheet at 350 degrees for twenty-five minutes or until brown.

Just make cornbread in a skillet.

Try this recipe for the cornbread:

  • 1 cup cornmeal
  • 1/2 teaspoon salt
  • 1 1/2 cups boiling water
  • 2 tablespoons unsalted butter
  • 1 1/2 cups buttermilk

Drop blobs of this into a skillet and fry like thick pancakes.

Chapter 1-Page 11- last paragraph: Smaller than the rest of the gang, but with a slight build. He had big black eyes in a dark tanned face; his hair was jet-black and heavily greased ad combed to the side, but it was so long that it fell in shaggy bangs across his forehead. There are many types of Johnny Cakes, like Bahamian, or Caribbean. But I know only of the Bahamian, for a World Geo. project...

  1. 2 cups of flour
  2. 2 tsp baking powder
  3. 1 teaspoon salt
  4. 1 Tblsp. shortening
  5. 1 Tblsp. sugar

Mix flour, baking powder, salt, shortening and sugar with enough water to knead.

Knead until smooth.

Roll out, on a lightly floured board, covered with a cloth and let lighten.

Then, bake at 350 degrees until brown on both sides (in a lightly greased frying pan) or for authenticity, on top the stove at very low heat. Serve warm with lots of butter.

Makes 6 servings.
