Really it depends more on what you intend to do with a degree in Anthropology.
Anthropology is divided into four major sub-fields: 1) biological, 2) cultural, 3) linguistic, and 4) archaeology. Other branches of anthropology include medical anthropology, forensic anthropology, corporate anthropology, applied (or practical) anthropology, and public anthropology.

Anthropology- study of humans. (culture, past, present, evolution of~). There could be several ways to interpret how anthropology is related to education. I think you could study the culture of a classroom, in order to best determine what would fit the needs of the teacher and students. Or if you're referring to teaching anthropology- anthropology is a major. So that's related to education because people study it?
There are many great schools out there, but I would look for a school that has a human remains facility. I went to Western Carolina University, and we had one there. I would say that was a huge part of what made this program so great. Probably THE major guiding principle in anthropology is that of cultural relativism, which basically states that to understand a culture requires understanding it from inside, and not to judge it by the standards of ones own culture.
