The temperature of a sample of the element Mercury depends on it's surroundings, just like most other substances. It is only that it has a low melting temperature that it is a liquid.

Daytime temperature on Mercury [the planet] can exceed 400OC.

Nighttime temperatures can be as low as -200OC.

As there is practically no atmosphere on Mercury, the side facing away from the Sun will quickly cool to nearly the temperature of space, or as low as 80 K (-193 °C). The spin and orbit of Mercury combine to create a solar day of about 176 days, so the "back side" of the planet has a cold night about 88 Earth days long.

At night, one side will be facing the other side of the Sun. Where there is no heat energy from the Sun, Mercury having almost no atmosphere, will not receive any sunlight and heat will go very cold.

Although the side facing the Sun becomes scorchingly hot, the side of Mercury that faces away from the Sun gets frigidly cold, as low as -184 °C (-300 °F). The planet's atmosphere (practically a vacuum) does not retain any heat. In the 88 Earth days that it takes for the surface to get sunlight again, all of the heat is radiated back into space.

The daytime side can reach as high as 480 degrees Celsius which is 800 degrees Fahrenheit. Because Mercury lacks an atmosphere to hold this heat in the night side of the planet goes as low as -170 degrees Celsius which is -280 degrees Fahrenheit.

Some areas of Mercury don't see the Sun, and it can be about 300 degrees below zero Fahrenheit. There is even believed to be ice on Mercury. However, mostly it is very hot, over 800 degrees Fahrenheit.
