There are some handlers placed somewhere (usually, under) the plastic frame of the monitor. Sometimes it's a single button (two, at least) assigned to different functions in some fixed order. You must find the order by entering the menu which pops up when you enter it. Then try to find the navigation key (this is another button or a wheel). Most of the times the button that enters the sub-menus is the same way out. Exit from the main menu sometimes is forced after a countdown.

You can make it smaller but changing the screen resolution. You can do this by going to the display settings in the control panel and clicking screen resolution.
To make your iPod touches screen smaller do as follows. 1. Place your right thumb on the right side of the screen and your left thumb on the left side of the screen 2. Slowly slide your thumbs across the screen towards each other 3. This should make the screen smaller
Sadly the screen in PMU is non-adjustable right now. So you cannot make it bigger or smaller.

No there is no way you can make a non touch screen - a touch screen. You need to buy a monitor with touch screen.
You can put a small thin screen protector on the screen. This will prevent from fingerprints on the lcd screen. Smaller netbooks make "bump" cases which is a small case that goes around it, in case you are "bumped" and accidently drop the machine. Designed to give it some padding. .
