I would not keep it for more than a week before putting it in the freezer. I kept one (jamón serrano--a Spanish smoked, salt-cured ham) hanging on my wall in the kitchen for about 6 months before I had finished it off. Good stuff. They don't do well in a moist environment because they get moldy. You can treat it like beef jerky.
