No you can't. It'll mess up the chemistry. You can use 1/2 baking soda 1/2 cream of tar tar I use this in all my baking as my mother never bought baking powder when I was a kid. should be two parts cream of tartar per one part baking soda. ex: 1/2 tsp. baking soda, 1 tsp. cream of tartar. Baking soda by itself is not acidic enough to react with all the basic ingredients in the recipe. Unless you add acidity by adding cream of tartar, the cornbread won't rise as much because not enough carbon dioxide will be produced.

Baking powder. Cornbread is heavy enough that it has to have something to make it rise. I don't think egg whites are going to be enough. Just for fun, I will try and make a batch tomorrow and will get back to you with the results.

Didn't wait till tomorrow. Just took a batch out of the oven. Different, very similar to a pound cake in texture. Not at all crusty like regular cornbread made with baking powder. Message me if you want the recipe I came up with.

Yes, you can use baking powder. Baking soda is usually used when buttermilk is the wet ingredient.
