If it's done for pure entertainment, yes. If it's done for the betterment of the cow's health and longevity--whatever reason a surgical cut must be done on a cow by a farmer who knows what he's doing or a veterinarian--then it is not considered cruel, nor should be, by any standards.

Why would you even think about doing that? Good luck. I woudn't recommend trying it In order to eat a live cow, you would have to be big enough to put it in your mouth whole. If you are butchering it, slicing of portions for eating, they will be dead when you eat them even if the cow isn't. It would be incredibly cruel to do this.
I think you're referring to the sport of cutting with horses. Cutting is a Western event that originated on the ranches. A horse and rider are put into a pen with approximately ten cows. They must then separate certain cows ("cut" them from the herd) and keep them away from the herd for a length of time. Top horses in the cutting world are able to do almost all of this on their own; the rider simply lets them know what cow to go after and the horse will do the rest. The horses will also anticipate the movements of the cow; a horse who can do that is said to be "cowy" or "have cowsense." That's my answer! Blue
