What about evaporation? Its not uncommon to have a underground pipe cracked, you should have a wet spot in your lawn, the water has to come out somewhere, sometimes it is very hard to keep the pump running though if one of these pipes are cracked or sucking air.

Why has so much of medieval Britain disappeared?

The reason so much has dissapeared is because of erosion for one because you have to think these are really old Buildings and erosion gets to them. They fall down only to be covered by soil, rocks,or roads and cities. The most plausible reason is erosion and being covered by buildings and roads ect.

If a swimming pool was unknowingly installed on top of buried tree stumps and a sink hole was created causing the pool to crack and cave would this be covered by homeowners insurance?

You'll need to read the policy to see if it's covered. You can get coverage for anything but it usually needs to be spelled out specifically in the terms of the policy. Anything not specifically covered is usually NOT covered.
