It varies from one cow to another. She may be freshening for a couple weeks before she even begins springing (or giving birth), or she may start freshening the second after the calf has hit the ground.

A cow first starts producing milk immediately after she gives birth to a calf. Heifers begin their very first lactation when their very first calf is born, which is when they're at around 24 months old. After that, lactation begins everytime they have a calf. Majority of cows, though, often will begin to bag up a few days to a week or so before the calf is born. Some producers use this as a means to judge when the calf will arrive.

It depends on the individual cow. Some will start producing milk or colostrum weeks or days before giving birth, others won't start producing milk until right after they've had their calf.

Right after they've had a calf. Some cows start lactating a few weeks to a couple days prior to calving; others start right after or during calving.

A cow starts lactating AFTER giving birth. A cow will keep lactating for ten months, then dry up for 2 before giving birth again. So, that's 12 months between the first and second births.

What is the process to let your cow dry up before delivery?

Usually drying up of milk should occur no later than 2 weeks or more (more often 2 months) before she is scheduled to give birth. This is because it usually takes 2 to 3 weeks for a cow to completely dry up, enabling her to start to produce colostrum a few days or less before birth.
