I do indeed know about this recipe! It's a simple recipe really. Make your dressing as usual. When cooking your onions and celery add 3 oz (assuming you are using about 6 cups of cubed bread) of dry, chopped, fresh oysters the last 5 minutes of cooking. Save the liquid the oysters came in and use it as part of the liquid you add to your usual dressing recipe. Make this immediately before cooking and store carefully. On a side note I'm 56 years old and this dressing was served at every Thanksgiving ever since I can remember! Oddly enough when I went to my first Thanksgiving at my husband's family (we were married 2 years ago) Oyster dressing was also a staple of their Thanksgiving! It seems that Oyster Dressing was most popular in the early 1900's. Harry Truman served Oyster Dressing at the White House Thanksgiving dinner in 1949. Typically this dish was popular in New England, most likely due to the availability of fresh Oysters.

It's probably the Union Oyster House in Boston MA. Ye Olde Union Oyster House first opened to the public in 1826, and if it's not the oldest surviving restaurant, it's certainly one of the oldest. It is still in business, and it's located not far from what is today known as Quincy Market and Faneuil Hall. On May 27, 2003, the building which houses the Union Oyster House was listed as a National Historic Landmark. (The photo above is from a postcard of Boston in the 1890s, when the Union Oyster House was already sixty-five years old.)

AnswerContrary to popular belief oysters do not produce pearls, mollusks do. The genus Pinctada is the primary producer of pearls.Theoretically any mollusk can produce pearls, but bivalve mollusks, from the family Bivalvia (mollusks with two shells attached by a hinge) produce what are considered nacreous pearls prized and used in jewelry.Gastropods such as those from the family Haliotis also produce "pearls" that are actually calcareous concretions, not nacreous pearls. An example would be abalone pearls.---- Nov 28 2009Oysters do produce pearls! I have millions of crassostrea Gigas (Pacific Oyster - once called the Japanese Oyster, minutes walk from my house - through Oyster farms and their release of spat into the local environment. Over the years, I've collected part of a film container of "Pearls" from these oysters, when harvested from the beach. I've broken a tooth, bighting down on one pearl.----------- British Columbia, Canada!---- Nov 28th 2009The Crassostrea gigas produces non-nacreous calcareous concretions as this shell is non-nacreous.
