No more than a couple of days. Usually the pancakes won't rise if you leave the batter in the fridge longer. Make crepes out of it if this happens. Only about 2 or 3 days, because of the eggs in it
Pancake batter should be thrown out when it reaches the expiry date on the package after being opened. After the expiry date the mix can be harmful or even fatal to people with mold Allergies, so if your in doubt, throw it out.
This really depends what you make them with.
If you are using Aunt Jamima Powder with Water then the will last about a week and you would not get sick from them. But oyu are better off to freeze them. Beter yet through the left over pancakes out and make new ones for $0.10 each. They are not going to go bad but they definitely won't taste as good as fresh ones.
If you are making your own batter the shelf life will be less as there are perishable items in the pancakes I would say no more then 48 hours.
