Once opened, tomato-based sauces are only good for five days to a week. Don't wait for the mold to form. In many cases, you won't see the mold in the sauce after five days, but it actually could be there. Some mold produce toxins that can be harmful, so why take the risk? Mold grows in very wet environments. What promotes the mold is the high moisture content. No amount of cooking will kill the toxins. So, to be safe, you need to throw it away.
Depending on the acidity of the tomato sauce, or whether artificial preservatives have been added, tomato sauce can be left out at room temperature (68-72 degrees Fahrenheit) for 2-5 days. You can make a quick sauce that cooks just long enough to heat the tomatoes through or you can make a more complex sauce with more ingredients that may have to cook for hours. The main factor is in the ingredients. If there are ingredient that need heat and time to blend their flavors you need to cook it longer. Or if the tomato sauce is too watery, the cooking may be needed to thicken it.

Tomato sauce would boil during cooking. The water is changing to steam and is leaving the sauce. Now, if you are talking about some sauce that is bubbling without heat, then those are gases produced by bacteria that are growing in the sauce - which means it is spoiled.
