400 degrees for 15 minutes to brown then reduce heat to 350 for another 15-20 minutes. Chicken is done when you pierce the meat with a fork, press on it and the juices are clear, not red or pink.

Roast the chicken in the oven for 15 minutes. Reduce the temperature to 375°F and continue roasting until the juices run clear and a thermometer inserted into the inner thigh (but not touching the bone) registers 165°F, about 50 minutes to 1 hour more.

At 300F I bake a chicken for 1/2 hour per pound. At 350F I bake it for 20 minutes per pound. Always test it before preparing to serve it, stabbing the thigh meat, the juices should run clear, and no pinkness or redness. Or with a meat thermometer it should read at least 165F. If I stuff the bird, I increase the cooking time by the weight of the stuffing. A 5 pound roaster stuffed with 2 pounds of stuffing is 7 pounds and I'll bake it for 2 2/3 to 3 1/2 hours.


NOTE: Always completely remove stuffing from the breast cavity while the fowl is still hot. Do not allow it to cool with the bird as this can aid in spoiling the meat.
