Usually it takes 5 minutes of boiling foods and water, or just water, together, that gets rid of the bacteria.

YET it matters what sort of saucepan or pot used, for health. Enamel is best.

There are many types of bacteria. Most of which does not survive boiling hot temperatures.

A few bacterias like the one producing Botulinum toxin, Clostridium botulinum, are highly heat resistant and would need prolonged boiling in order to be killed off properly.

Some sources claim that even 1 hour of boiling is not enough for this bacteria.

The combination of high pressure and heat (as in a pressure cooker) will however kill it off properly.

We should not be too alarmed by this bacteria though.

Most bacteria will not survive ordinary cooking.. Even heating to 80 degrees Celsius for 15-30 minutes will kill off most of our common daily bacterias.

We can not avoid eating bacterias altogether.

Most bacteria will simply die and be digested as food.

If the point is to "sterilize" when making own jars of home made jam, then you should boil the jars after you fill them with jam for 10-15 minutes. Put lid on very loosely so that pressure can not build up during boiling procedure. When finished, tighten the lid and seal jar properly. Afterwards, the jars will keep Jam "fresh" for years.

Actually, you don't need to boil at all. Once the liquid reaches 70 C, the bacteria die. Boiling occurs at about 100 C. So if it has already started boiling, the bacteria are dead.

Typically they recommend at least 5 minutes at a rolling boil.

Boiling water for a few minutes at temperatures of 85 degrees or above will kill all pathogens within few minutes.

Not all bacteria are killed by boiling water. The only way to kill many is by sterilizing using steam heat under pressure.
