Roast @ 350°F in the oven, tented with foil except for the last bit so it browns. Brush with butter intermittently.

20 minutes per pound should do it.

Let it stand 10-15 minutes after you take it out of the oven before slicing.

With white meat it is 2o minutes and pound and 20 minutes extra so u cook and 8lb piece for 3 hrs........

Three hrs if you want shoe leather ! Try this instead.

The best way is to figure approximately 15-18 minutes per pound AND use a thermometer. Either an oven safe one in thickest part of breast that stays in the bird while cooking or an instant read and check the temp occasionally, again in thickest part of breast.

Start approx. 3/4 of the way through cooking and remove from oven when thermometer reads 150' F. Tent lightly with foil and let rest a minimum of 20 minutes. It will continue to cook after removal from oven and reach the desired 160'.
